Rusty’s Red Passion Parfaits

One of our favorite signs of spring in Adams County is the sight of fresh produce. Strawberries are one of the first fruits to become available during the Adams County growing season and aside from eating all the fresh strawberries we can, we know that we’ll be making these Rusty’s Red passion parfaits all season long.

These parfaits combine a sweet, homemade strawberry compote – made simply with fresh strawberries, sugar and Adams County Winery’s Rusty’s Red wine. You cook the compote down until it is thick like syrup and then layer it with a dreamy, homemade chocolate mousse. We topped ours with fresh sliced strawberries and mini chocolate chips.

If there is one dessert that you make with fresh strawberries this spring, make it these Rusty’s Red parfaits! Stop by one of our countryside markets to pick up your strawberries, as well as other in-season fresh produce. And visit Adams County Winery’s home winery in Orrtanna, Pa. to pick up a bottle (or two) of Rusty’s Red. While you’re there, relax on their Terrace Bistro with a wood-fired pizza and glass of wine. Or, you can visit Adams County’s Winery’s downtown Gettysburg location – the Wine Shop at 25C.

Rusty’s Red Passion Parfaits

From Adams County Winery’s blog

For Strawberries

1 pint fresh strawberries, trimmed and halved

1 cup Sugar

1 cup Rusty’s Red wine

For Mousse

1 pint heavy cream

1 cup dark chocolate chips

Splash of vanilla extract

Combine strawberries with sugar and wine until thoroughly mixed. Place on stove in small saucepan and cook at low temperature for 15-20 minutes, or until wine and juice has thickened into a glaze-like consistency. Chill strawberry mixture in fridge. Meanwhile, heat heavy cream up until steaming (note: do not boil cream). Once hot, whisk in chocolate chips and vanilla extract. Stir until chocolate has melted completely. Place cream into fridge. Chill both mixtures for 8-12 hours.

Whip the chocolate cream mixture to stiff peaks, until fluffy. In a wine glass, or other small glass, layer spoonfuls of mousse and strawberry until the glass is full. Cheers someone you love and enjoy!
